Serves: 4–6 people

Ingredients
2 cups peeled beans (black-eyed peas)
1 small onion
Fresh pepper (to taste)
1 tsp Toria Mixed Spice
½ tsp Toria Cajun Seasoning (optional)
Salt to taste
Vegetable oil for frying
Method
Blend beans, onion, and pepper until smooth and fluffy.
Whisk batter to incorporate air for soft, fluffy akara.
Add Toria Mixed Spice, Cajun seasoning, and salt.
Fry in medium-hot oil until golden brown.
Drain and serve warm.

Toria Pepper Soup (Light Ramadan Style)

Serves: 4–5 people

Ingredients
1 kg goat meat, chicken, or fish
2 tbsp Toria Pepper Soup Spice
Half tsp Toria Garlic powder
Half tsp Ginger powder
Half tsp Onion powder or 1 small onion
Fresh Pepper (to taste)
Seasoning powder
Crayfish (optional)
Scent leaves or basil leaves
Salt to taste
Water
Method
Boil protein with water, onion, garlic & ginger, fresh pepper, seasoning and salt.
Cook until tender.
Add Toria Pepper Soup Spice and simmer for 10–15 minutes.
Add scent leaves and adjust seasoning.

Toria Moi Moi

Ingredients
2 cups peeled beans
Fresh pepper
Shombo and Tartashe
1 small onion
¼ cup vegetable oil
1 tsp Toria Mixed Spice
½ tsp Toria Italian Seasoning
Salt to taste
Seasoning powder (to taste)
Water or stock
Crayfish (optional)
Moi moi leaves or cooking pouch
Method
Blend beans, pepper, and onion until smooth.
Add oil, spices, seasoning and salt.
Add water/stock to medium thickness.
Add desired protein like chicken, smoked fish, egg etc.
Pour into the cooking pouch or moi moi leaf then Steam for 45–60 minutes until firm.

Suya-Style Chicken or Beef (Using Toria Yaji Spice)
Suya-style meat is a popular Nigerian protein for iftar gatherings.
Serves: 4 people

Ingredients
1 kg chicken or beef (strips)
1 tsp Toria Cajun Seasoning
2 tsp Toria Yaji spice
1 tsp oil
Salt to taste
Method
Season meat and marinate for 20–30 minutes.

Ingredients
Blended tomatoes, pepper, and onions
2 tbsp oil

Fry blended pepper mix until oil separates.
Add protein and cook briefly.
Add Adobo and Curry Blend.
Simmer gently for 10–15 minutes.

Ingredients
2-3 cups Zobo (hibiscus) leaves
Fresh ginger (thumb sized)
Mint leaf (dried or fresh) handful
Lemon grass (handful)
Cloves (2-4 pcs)
Medium sized Pineapple
Sweetener (dates or sugar to taste)
Method
Boil zobo leaves with pineapple peel, ginger, mint, lemon grass and cloves.
Sieve then Blend the pineapple and Add pineapple juice
Strain, sweeten lightly, and chill.
Perfect for: Hydration after fasting.
